La Piece de Resistance: Vegetable Tortilla Casserole

I wish I was finished with the Latin meals in minutes diatribe.  Unfortunately, there's more.  Growing up as a wee lass in Michigan, I always wondered what a casserole was.  The MI folk were forever having casserole.  In time I learned that it was a congealed mass of regurgitated looking foods with some crispy layer on top, like funyons.

So Latina magazine tells us to take tortillas (the poor tortillas) and cook them together with cream of celery soup and cheese.  The result is the same gummy mess that hangs from Mumm Ra's lips  (the evil dude from Thundercats, Mumm-RAAAAAA the everlivingggggg!  mwahahaha.)  Sorry, then they top this stuff with salsa and more cheese calling it vegetable tortilla casserole.  If this sounds good to you, I admire your openmindedness.  Pass me a takeout menu.

This meager attempt at Latinizing a Midwestern staple surely incurs Montezuma's well deserved revenge.  Now I can't cook, but I don't need to stick my head in the trash to know it smells, man.  Behold the photo looking like the dog barfed up his capirotada from Easter a couple of weeks ago.  Vegetable tortilla casserole.  Buen provecho.

GROOOOOOOOOOOOOOOOSSSSSSSSSSSSSSS!!!! What the... Okay I feel you, as to living up in MI and not really knowing what casserole was... makes me research why this type of cuisine came to be...

But now they are making our food like that... I like separating my rice from beans its just the way it is!
